Mambazha Morekuzhambu and Mullaikeerai Masiyal Recipe | Classic Combo 41

We as human beings have a great appetite for colour. The colours around us can actually impact our hunger cues by either activating or deflating them. Colour “Green” is thought to be healthy regardless of whether the food is nutritious or not. This habit can be traced back to our ancient living where food was foraged and any produce, green in colour was considered to be safe and not poisonous or lethal. This “ancient” brain sense of ours has been very successfully tapped by brands such as Tropicana and Starbucks with their green logos and great success.

When it comes to revving up our appetites, no colour can beat Red. The body’s physiological response to this colour of devil and cupid, raises heart rate and blood pressure inducing us to want to tear through burgers and fries just a little faster. Can you now see the reason and treason behind the colours of McDonald’s, Pizza Hut, Burger King, Domino’s &  KFC?

The colour yellow is associated with happiness and the brain secretes more serotonin, a feel-good hormone. This sunny colour helps us to dig into our food optimistically and with loads of warmth and comfort. Subway, Lay’s, Cheetos use this colour of sunshine to stimulate our desire to eat with joy.

The Pinks, Browns, Greys and Blues are appetite suppressants. Brown is tricky …it can evoke a feel of burnt food or may leave you lip-smacking thinking of dark chocolate and baked goodies. MAMBAZHA MOREKUZHAMBU RECIPE

Ingredients for Mambazha Morekuzhambu:

  • Peeled Cubed Ripe Mangoes 1 C
  • Thick Curds Sour 1 C
  • Red Chilly 6
  • Mustard Seeds 1 Tsp
  • Rice Raw 1 Tsp
  • Cumin Seeds 1tsp
  • Grated Coconut 1 Tbsp
  • Curry Leaves Few
  • Asafoetida 1 Tsp
  • Coconut Oil 1 Tbsp
  • Turmeric Powder 1 Tsp
  • Salt As Required

Preparation Method for Mambazha Morekuzhambu:

  • Whisk curds along with salt and turmeric.
  • Add the ripe mangoes.
  • Grind mustard seeds coconut, cumin and red chillies to a smooth paste.
  • Add oil in pan, splutter mustard, curry leaves and asafoetida.
  • Add the paste and cook on low flame for 5 minutes along with ½ c of water. (Simmer).
  • Add the curd stirring all the time. When the curd becomes warm switch off the flame. Serve with hot rice.

NOTE: For the bright green colour 

  • Cook open pan. Do not pressure cook.
  • Add required salt and a pinch of sugar at the beginning of the cooking process.
